Viking. The new Professional Electric 30-inch Induction Range combines an induction cooktop with an electric range and the maker’s traditional commercial look and feel. MagneQuick induction uses magnetic power to react with the iron in cookware, creating nearly instantaneous heating at as 90% heat efficiency, the maker says. The oven features a dual-concealed baking element and a fast preheating system. The patented Vari-Speed Dual Flow convection system uses a two-speed reversing convection fan for balanced airflow and heat distribution, yielding even cooking. An infrared broiler provides intense heat for a variety of broiling applications.
